I’m not sure about your family but my family is crazy picky. So it’s a rare win in my house when I find something that everyone will eat. But I did it tonight.
I have been searching for an easy recipe that takes minimal effort that the whole family will love and this is it. Next time I will make green beans for this dish but I just used what I had already. Chicken and Potatoes are a staple item at my house so I usually have them on hand. Tonight I had my favorite little chef help. As soon as she saw I had my apron on she had to get hers to help. typically she will help pour oil, mix, and of course she placed the lemons in the dish.
Ingredients:
6 Tbs Olive Oil
2 Lemons (1 thinly sliced, 1 juiced)
4 teaspoons minced garlic. (I usually buy a jar of minced garlic to save time)
1 teaspoon Kosher Salt
1/2 teaspoon fresh ground pepper
10 small red potatoes (cut in half or quartered)
3 or 4 Boneless Skinless Chicken Breasts
Prep Time 10 Minutes
Cook Time 1 hour 10 Minutes
Oven Temperature: 350 Degrees
Instructions:
1. Pre-heat Oven to 350 degrees
2. Coat a large glass baking dish with 1 Tb of olive oil.
3. Arrange thinly sliced Lemons on bottom of dish in a single layer.
4. Combine 1 cup of Lemon Juice, 4 tsp garlic, 1 tsp Salt, 1/2 tsp Pepper and 5 tbs Olive oil in a large bowl.
5. Place the Red potatoes in the bowl and toss them. Place them on the outer edge of the baking dish on top of the lemon slices. (I found that tongs were the easiest way to do this)
6. Toss the Chicken breast in the seasonings and place the chicken in the center of the dish on top of the lemon slices.
7. Pour the remaining mixture over the chicken and potatoes
8. Bake for 1 hour and 10 Minutes at 350 Degrees or until the potatoes are soft and chicken reaches an internal temperature of 165 degrees.
The whole family enjoyed Baked Lemon Chicken and Red Potatoes. A Rare win for Mommy.
